This training will detail and reinforce procedures for conducting and documenting field activities during various emergency responses, including environmental assessments; sampling; basic laboratory procedures and WGS; product traceback procedures and activities; and product recalls, while introducing Incident Command System principles. The intent is to provide field-focused training to sanitarians and inspectors involved in investigations of human and animal food-related incidents and outbreak investigations. The training is intended to continue MDARD’s efforts toward participating in an Integrated Food Safety System.
Prerequisites: It is recommended that trainees have 6-12 months experience and a basic understanding of microbiology as it pertains to foodborne illness (e.g., FDA Office of Training Education and Development (OTED) Food Microbiology Control (MIC01-MIC15).
